Inspired by the bustling ramen-yas (ラーメン屋) of Japan, Maki & Ramen is a UK-based Japanese restaurant chain redefining traditional Asian dining. Founded by chef Teddy Lee after his culinary journey through Tokyo, our mission has always been simple: to bring authentic ramen and sushi to local communities without compromise.
At Maki & Ramen, every bowl of ramen tells a story. Our noodles are handcrafted daily, and our rich, flavourful broths are simmered for over eight hours in our Edinburgh factory—delivering depth, comfort, and authenticity in every bite. Our sushi is made to order, using only the finest ingredients, reflecting the delicate artistry of Japanese cuisine.
Before Maki & Ramen, authentic Japanese dishes were rare in the UK. We changed that—pioneering freshly made ramen and elevating the standard for quality. Today, guests from across the globe dine with us, and international students seek out the comforting familiarity of our food.
With nine sites across three regions and over 200 dedicated team members, we’re proud to put our people first. Our ethos, “Our Team Comes First,” ensures strong job stability and growth within the communities we serve.
